Breakfast is one of my favorite meals of the day, and I will never understand how people don't wake up hungry! I always do. Well, almost always.
If I could, I would eat gourmet, fancy breakfasts, every single day. But, no one has time for this. Eating healthy isn't always "quick" and meals would always stress me out. Especially when you have the most teeny tiny NYC kitchen known to man. Meal prepping has been a lifesaver for me these last few months! I started meal prepping Brady's lunch a few months ago, started doing dinners a month later, and now I do breakfast, lunch and dinner! It is amazing and saves me so much time.
Wild Blueberry Oat Bowl
Steel Cut Oats (I use THESE)
Flax Seed Meal (or Whole)
Vanilla (powder or liquid)
Frozen Wild Blueberries
Unsweetened Almond Milk
Unsweetened Coconut Flakes
Pure Maple Syrup
1. Make your Oats according to the instruction on package. Add in 1/4 c. Chia Seeds, and 1/4 c. Flax Seeds. I add in a couple teaspoons of Vanilla for flavor. Typically, Steel Cut Oats cook for about 45 minutes, which is why I like to make a lot and save it for later! (It tastes the exact same reheated!) Store in air tight container and in the refrigerator.
2. Add chilled oats to bowl, top with thawed frozen wild blueberries. (I LOVE Trader Joe's brand) Fill bowl with almond milk and heat up in microwave for 1.5 minutes!
4. Top with coconut, walnut bits, and a drizzle of pure maple syrup! You can omit the syrup, but I always add either a little of that or some date juice! I find it needs a little sweetener.
